01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas very dry using a clean kitchen towel to remove as much moisture as possible.
03 - In a mixing bowl, combine chickpeas, olive oil, ground cumin, chili powder, smoked paprika, garlic powder, cayenne pepper if using, and sea salt. Toss until evenly coated.
04 - Spread the seasoned chickpeas in a single layer on the prepared baking sheet.
05 - Roast for 30 to 35 minutes, stirring or shaking halfway through, until golden, crispy, and fragrant.
06 - Remove from oven and allow to cool for 10 minutes to increase crispiness.
07 - Optionally, toss with chopped cilantro and a squeeze of lime juice before serving.
