01 - Preheat oven to 425°F. Line large baking sheet with parchment paper or foil.
02 - Spread frozen tater tots in single layer on prepared baking sheet. Bake 20-25 minutes, turning halfway through, until golden and crispy.
03 - While tots bake, place diced beef bacon in skillet over medium heat. Cook 5-7 minutes, stirring occasionally, until crispy. Drain on paper towels.
04 - Remove crispy tots from oven. Sprinkle cheddar and mozzarella cheeses evenly over hot tots. Return to oven 3-5 minutes until melted and bubbly.
05 - Remove from oven and immediately top with crispy beef bacon bits and sliced spring onions.
06 - Transfer to serving platter. Add dollops of sour cream, garnish with black pepper and optional fresh herbs. Serve immediately.
